Foodie Blog

This is a project that has been boiling in my head for quite some time now and finally it's coming to life.
Before I start, here are some disclosures you need to be aware of:
First, I am not a trained chef, cook or professional food worker, I'm just a foodie but more than a foodie I just love to eat (seriously I do).
Growing up, I was very fortunate to have a grandfather that worked in the diplomatic service and a grandmother that loved cooking, but not only she loved cooking she was also very good at it and it is because of her that I developed my love for food. Why is this important to mention the diplomatic service?. Well, the fact that they lived in different countries during my childhood and that my mother worked for an airline, allowed me to visit them wherever they lived, which exposed me to different and magnificent foods around the world and of course my grandma's version of those delicious dishes. So there I was, in love with food that I had no access to for most part of the year and a constant craving that was not being fulfilled, no one at home would cook those dishes for me. Solution to my problem was easy I had to lean to cook.
Second thing you need to know, I have a very hard time following the rules. Why is this important?. Well part of this project is about changing, challenging and tearing apart some recipes that have been proven over and over again, I know, it's shameless disrespect to trained or untrained professionals, however I will not do it out of ill will ever, it's more related to adapting beautiful creations to what I like or can work with when certain ingredients are not available, be that for geographical reasons or cost implied. With that in mind I do honestly apologize if I ever offend someone with what I do or will do in this space.
Third, while I love top notch restaurants and the food of awarded chefs, I also believe that the little guy deserves world wide recognition and by the little guy I mean all those small places that will never receive an award, places like small family restaurants, eateries, hole in the wall kind of places and even street vendors, yes, street vendors. Because I'm no food critic I will try to abstain form publishing reviews (which was my original intention), instead I will dedicate some lines to those that impress me for any reason, so please don't take it as a review but more like a foodie recommendation.
Ah yes before I forget, one more thing, English is not my first language so you might (you will) find typos and grammatical errors across all my publishing, feel free to call them out with out hate :), just be aware that I might or might not go back and correct so please don't take offense in this either
